Pork loin tacos
Ingredients:
- 2-2.5lbs. pork tenderloin (about two tenderloins)
- 1 Tbsp salt
- 2 tsp pepper
- 1 Tbsp cumin
- 1 tsp oregano
- 1 tsp chili powder
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 – 2 chipotle chilis in adobo sauce, finely chopped (about 1 Tbsp)
- Zest & juice of 1 lime
- Juice of 1 orange
A few notes on making these:
- These are easy to throw in the oven early in the day and then have ready to go at dinner time. The juice and seasonings make them so flavorful.
- Don’t be tempted to roast this uncovered—the cut is lean and will dry out.
Directions:
- Preheat oven to 300° F.
- Rub the pork loin with some olive oil and place in Dutch oven.
- Add spices, adobo, and juices over pork loin.
- Bake covered at 300° F for 2.5 – 3.5 hours.
- Remove and shred meat. Adjust seasonings and add back to the sauce.
- Serve in warmed corn or flour tortillas with guacamole or avocado crema.
